I just made this delicious breakfast this morning, and it is so light and fluffy, you would think you had picked it up at a 5 star restaurant! Many of us have so much happening in the morning, that we skip breakfast, which some say is the most important meal in our day. My cousin and I were talking the other day, and we both realized that we rarely eat breakfast-and we wanted to work on this problem. Here is an amazing and tasty simple solution that you can prepare and cook in under 5 minutes! Please try this recipe and let me know what you think! There are many variations-southwest style with black beans, tomatoes, cilantro, and avocado (added after you cook it), my favorite is a french style, which I did this morning-with spinach, fine herbs, and parmesan cheese (I forgot mushrooms-but that would be amazing!). INGREDIENTS:
- 2 eggs
- 2 T. Milk (I used whole)
- A pinch or two of seasoned salt, or just regular salt
- A pinch of fine herbs (optional)
- Pepper-to taste
- Cayenne pepper (I like to add a pinch, but this is optional)
- 1 T. Parmesan Cheese
- 5 leaves of spinach
- 3 mushroom slices-broken into pieces
- 7-8 croutons (I used New York brand, Texas Toast-Butter Garlic)
- Cheddar cheese or mozzarella for the top (Optional)
- Spray or lightly coat a mug with butter, margarine, cooking spray, or olive oil
Microwave for 1 1/2-2 minutes depending on microwave strength. You should see the egg start to puff up above the mug. Turn the microwave off, and check, to make sure that there is no liquid-if its done take it out, and let cool for a few minutes before eating. Enjoy!
